| Irish Soda Bread |

| Grandma Mary’s Irish Soda Bread
Makes 2 loaves
2 C whole wheat pastry flour
2 C flour
2 t baking powder
1 t baking soda
dash salt
1 C sugar or less
1 stick Reduced Fat Imperial margarine
1 C golden raisins
1 C dried cranberries
1 16-ounce Reduced Fat sour cream
2 eggs, beaten
Preheat oven to 350°.
Mix dry ingredients together. Cut in margarine with pastry knife or use cold hands. Add raisins – coat to separate. Add beaten eggs to sour cream and mix well. Add sour cream mixture to dry ingredients.
Portion into 2 large loaves or smaller loaves if desired. I like to use Texas-sized muffin tins to make miniature loaves.
For the large loaves Bake at 350° 15 minutes; then at 325° for 45 minutes.
For mini loaves or the Texas-size muffins, Bake @ 350° 13 minutes; then at 325° for 25 minutes.
